The Paraiso farm owned by Will Armijo is a culmination of many years of history and hard work. Both his father and grandfather were coffee producers in Yoro, giving Will Armijo an education in farming and production since childhood.
We feel so special to get to work with small farmers like Will, who work so hard to create a product of the absolute highest quality. His coffee is produced with utmost care, hand picked and sorted, and depulped daily. After 16 hours of dry fermentation, the beans are washed repeatedly and then placed in a solar dryer for 17-22 days, during which time the coffee is sorted by hand to remove defective beans.
